How many Bs for 3.8+

Realistically speaking, how many Bs can I afford to get until applying (end of junior year) to maintain a 3.8+ GPA?

It depends upon how many credit hours you have. You should be able to calculate this on any number of GPA calculators you can find online, or you could ask your advisor.
 
One B for every 4 A's pretty much.

Just Bs (not B-/B+)?

Assuming all classes are equally weighted, and ignoring labs, etc, you get Bs in 20% of your classes (as long as you get straight As in the rest) for a 3.8.
 
It really depends on how many credits the classes are where you get the B's and how many overall credits you end up with, but just to give you a rough idea:

I had 2 B+, 2 B, a B- and a A- with all the rest A's and my cGPA is 3.89. I have 138 credits.
