I am getting my associates in biology/anthropology and when I transfer I'm going to focus on The anthology part so I'm just wondering how many upper division science classes I need to take since all my pre-reqs will satisfied with my AA

Prereqs aren't all that standard anymore. Get obsessed with the requirements at med schools in which you're interested by monitoring their admissions web pages. You'll find that some schools now require biochem, genetics etc. You might find some schools that aren't happy about CC prereqs, and that might motivate you to take upper div biosci.

But, generally, if your GPA is high now, and it stays high (3.6+) for the rest of undergrad, and your MCAT is good (31+), then you're done proving what's needed for med school admissions.

I suggest that thriving in at least one upper div biosci class (biochem, immuno, microbio, genetics, physio etc) would be beneficial, requirements notwithstanding. An A or two in hard biosci classes at a university would likely quiet any doubts about CC prereqs. It would help with comprehension of MCAT concepts. It would help when you get into med school and you're swallowing the biosci firehose.

Best of luck to you.
