How much freakin notice will we be given prior to interviews?

The day before.

You typically get from several weeks to a month. Usually they give you some dates to choose from so you can do it really soon or in a while. If someone has cancelled and you choose to take their spot, though, you could get an interview in only a few days.

I had one school offer me interview dates for the following week, but I think that you'll experience a longer wait with public/state institutions. For example, I was notified that I would interview @ SUNY Downstate in mid-February at the end of December, and I think I had to wait close to two months for the Buffalo interview. So it all depends. But Syranope is right - estimate several weeks to a month. 🙂

The shortest time: 6 days (of course i had to book a flight cross country and spend an arm and leg for airfare)
Longest: 1 1/2 months (I picked it myself, mainly because my schedule was packed and I couldn't get away for a while-For those who say you should pick immediately as to have a better shot at med school, it was a non-rolling admissions school and I will attend)

Interesting.

Buffalo gave me 5 days notice, Penn State was about 2 weeks, and all the other schools were at least a month ahead.
