Did you ask to shadow your dentist? I just got back from school and will be leaving again on Jan. 15.

Did you get to shadow right away or did you have to wait a few months to get in?

Depends on the dentist. If you know him/her well, just call the office and see how busy they'll be during the next two week. Find out when the best time to come in would be. I would think that a weeks notice would be plenty.
 
The dentist I called just had me schedule an interview and come in the following day. Most are rather flexible, but it really all depends, your best bet is to just give it a try, and call them. Good luck.
 
I shadowed my regular dentist, they got me in to shadow about a week after I called and asked.

So how often do you see the dentist that you are shadowing? Like 1hr/ week or so?
 
During a break, I shadowed one full day a week at the dental clinic I was at. It really depends on what the dentist will let you do and how much you want to do.

i called, he said i was welcome to visit any day, as long as i called a day before 🙂 . I suggest to shadow with at least two different dentists
