How much should I write for secondary essays?

I searched for this and a bunch of school specific threads popped up and I didn't want to dig for the answer. Do we have to write up to the word limit or can we write less? Will it look better?

You don't have to write up to the word limit on secondary essays. As far as if it will look better or not, I'm not sure. I would think that writing a lot looks better than writing too little. However, the most important thing is that your responses are well thought out. Also, I don't think that adcoms like to see a lot of fluff, so you should not be writing just to reach the word limit.
