I began volunteering at a hospital in high school and have continued since then. Should I only report my hours after high school graduation or should I make it continuous since high school?

It's fine to include the HS hours, but make it clear what the timespan and Total Hours for HS through HS graduation were vs after HS graduation. You can do this with the Repeated feature on AMCAS or by listing the two timespans and subtotal of hours in the narrative space.

I don’t believe this split is necessary. The date of graduation from HS is on the application. What does it matter if it is 6/2015-5/2022 vs
6/2015-6/2019 and 7/2019-5/2033
It would make more sense to split into more-Covid and post-Covid, particularly if there were a gap in service.
6/2015-3/2020 and 2/2022-5/2022 makes more sense if combining many years with a ling and understandable pause.
