how to prove general volunteer hours

Not unless the school specifically says so. In OTCAS, you just enter the number of hours you volunteered and where. I even applied to a non-OTCAS school, that did not require proof of volunteering (just observation), and just included my experience on the resume I was required to submit. In my case, I used the supervisor at the facility where I volunteer as a reference, but for no program was I required to send a separate document that verified how many hours I put in there.
 
You can print off a general form for observation and/or volunteer hours and have your supervisor sign it, just in case. I did this for each of my volunteer and observation sites, and while none of the schools I applied to requested proof of my hours, it was nice to know I had it. One less thing to worry about during the stressful application process! 🙂
