I was wondering if people could fill me in as to when the best time to start the AAMC material is. Also are you supposed to take the entire section bank/question pack in one sitting? I haven't selected a test date and am scoring in the low teens on 3rd party full lengths. I am trying to score around a 518. So any advice as to how much longer I need to prepare would be awesome as well.

when is your test date?

there are many ways to do it. I recommend about a 4 weeks out (better to overestimate and assuming your test is far away) w/ solely AAMC material and if you have extra time, do some of your other material or review the AAMC more (making a schedule would be handy here if you have other obligations like school). I divided up my section banks and q-packs in multiple sittings (especially for the CARS one) with the option to show the answers so that after I completed a set of q's for a passage, I would be able to review and try to catch a mistake, then try to improve for the next passage.

I was thinking about taking it at the end of April or early May. I don't really have any obligations to speak of. I think that is a good idea being able to see what you got wrong after you finish the passage

I didn't start using the AAMC questions packs until around 4-6 weeks before my test either. You definitely don't have to do it all in one sitting. You could even combine different question banks and make your own full length test. I definitely agree making a schedule is helpful here! You don't want to run out of time and not be able to use the AAMC resources.
