How will schools interview the same number of applicants within the shortened interview cycle?

Although there are some schools that have extended their interview season on the back end, many have not. Many schools are still only interviewing until late January, despite starting interviews in September or October. Originally, schools would be conducting interviews in July/August, so the interview cycle for some schools will certainly be shortened. How will schools accommodate the same number of interviews in a shorter timeframe? Will they be interviewing more at each interview? Having more interview dates? Or simply interviewing less people?

You are making quite a few assumptions about the schedules prior to 2020 and in the current cycle. I do not believe that your assumptions are correct.
