What do you mean how would you classify it?
A LOR will only be helpful if the person writing it knows you well and can speak to your accomplishments. If you haven't done anything particularly unusual in terms of being a volunteer there, I'm not sure that would be the best place to get a letter from. If you have, then it still may not be all that helpful - it depends on the recommender. Feel it out.

Non-clinical volunteering based on what you said you do.
And the impact of a LOR depends on the prestige of the organization/letter writer, how involved you were in the organization, and how well the letter writer knows you
