I will attempt to answer your questions in the order they were asked:
I took the Kaplan Online/classroom course combo. It is a very good prep for Gchem and Orgo, but somewhat lacking in the biology details that seem to be on the recent DAT's. The RC seems pretty good, the QR section of the online component really takes you through every step of the calculations, and the PAT is definitely easier than to the real thing. Most SDN'ers use Schaums or Campbells AP Biology review books to get into the meaty details of the BIO section.
Whether or not 2 months of non-stop cramming is enough depends on how prepared you feel after this time has passed. If you are diong very well on the practice tests like Topscore and Achiever, than you are likely ready, however, just because you are not very well does not mean you are not ready either. I suggest you read over the DAT forum to see the posts of people with their scores and how and how much they studied. You will see that many people studied for 3, 4, 5 months or even more to get the scores they wanted. For some, two months would be plenty of time to cram. I am not one of those people, and you have to figure out if you are.
As far as getting in for 2008. obviously your application is very late when compared to the beginning of the cycle and the first wave of interviews, but still within the deadlines allowed for this cycle. IMO, your stats and DAT would have to be pretty stellar to have a good shot at this cycle since the first acceptance letters go out on DEC 1st from the schools. There is nothing wrong with applying, but if you are going to rush your DAT in hopes of going for 2008, IMHO it would be better to study longer and be sure you are prepared and go for 2009. I don't know your whole situation, but I chose to forego my 2006 cycle for this year because I was rushing through the material. I am glad I waited.
For the Pat, there is Crack DAT PAT, an online PAT only study aid that you must pay for. It has a lot of questions, and the more you pay the more access you have to the question bank. Most people seem to think that this helped them a lot:

DAT Achiever and Topscore are two full length practice DAT exam that both have PAT sections. Mose SDN'ers wouldn't even think of taking the DAT before completing ALL of the material in these resources VERY THOROUGHLY. DAT Destroyer is another frequently used resourse that most SDN'ers complete SEVERAL TIMES THROUGH before taking their DAT. It consists of questions and solutions for the science and QR sections of the DAT, no PAT or RC is in this resource.I do not know of any free PAT practice other than the free full length DAT on the ADA website:
