I like all 3! 🙂. The only perspective I can give you is as a fellow applicant, but I think any of those topics will paint something interesting about you.
As for which of the 3, I'm leaning more towards the second one because it sounds like you can get the most information across about it in a smaller amount of words. With 1 and 3, I feel you would have to describe a lot more. But again, if space isn't a limit (but when is it not :/) then any of them seem fine to me.
As for the red flag with the public speaking, I wouldn't say it is a red flag since you are showing how you have overcome your fear.
