If they ask "Do you have any more interviews coming up?" or "Have you already had some interviews?" Do I just say "Yes" or "No" or do I volunteer more information? Like do I say "yes, one other school?" or even give the name?

I am in the MD/DO pathway. Out of 4 interviews, I have not been asked this question. I have been asked (at a DO school), if I applied to the state MD school.
My answer was that at this stage in my life (I am VERY non-traditional and a career changer) I can't afford to take chances on not getting in to medical school this application cycle. I applied VERY broadly to more than 20 schools, I chose 12 DO schools and 8 MD schools where I thought I would be able to fit in and earn a degree where I would become a physician. I would be happy going to any of those schools, but I am mainly excited to apply to this school because (name three things that made me choose the school where I am applying).
It worked for me because I was accepted at the school that I said it.
I know to be honest, I was just wondering if I should give more information than they are asking for. If they ask "Do you have anymore interviews?" Do I just say "yes" or do I also tell them how many and where even though they didn't ask?

Your interviewer knows that chances are, you applied to more than just their school. If you answer yes, they'll probably prompt you to tell them where/when.
I'd say something like yes, and list couple of schools if I have more. for example, if they ask me then i'd say yes, I have a NYU interview next month, if that's what I have coming up
