How much of a role do interviews really play in the whole ranking process?

It depends on the program. It matters greatly in small programs. In a group of 3 or 4 one unsociable non-team player can make for 4 difficult years.

In a group of 20, not so important.

I think this topic has been debated on other threads though.

Vomiting on, hitting on, spitting on...your interviewer..doesn't bode well for your chances.

Other than that, it's program specific.
