I am currently interested and involved in research in plastic surgery. However, I know full well that it's possible that I change my mind down the line. I'm wondering if I do research and have publications in a specific subspecialty like plastics or ENT, would these publications be just as useful if I were to ultimately apply to gen surg down the line than if I did research in say, trauma surgery or some other subspecialty of gen surg?

Plenty of people dual-apply to plastics and gen surg (often if their plastics app isn't as strong) and get interviews at both. If you have additional non-plastics, gen surg-related research you would definitely be fine.

Research within the specialty > research outside the specialty >>>>>>> no research.
