Say I'm a senior in high school and live in California. If I commit to Indiana University and eventually graduate, would I have to become an Indiana resident during some point in that time? If no, does that mean if I apply to a medical school back in California, I could pay the in-state tuition?

I would Google residency requirements for both states.
But I will think that you're the resident of where your parents live.
