I'll be teaching a class at the university I'm at on Mondays. If I get scheduled for a Monday or Tuesday interviews, how flexible are schools with a request to change?

Depends on the school. Some schools only interview a couple of days a week and so if those days happen to be Mon/Tues you will have to accomodate. And not all schools interview on the same days.

I had one interview where I got to pick the day, and the others were scheduled but I could change them. As you get closer to the end of the interview season, it becomes much harder to change the day because they run out of interview slots.
