So, a couple of the physicians at the practice I work at offered to run through practice interviews with me....This might be a stupid question, but should I accept the help? Like, they have limited time and I don't necessarily want to be a bother. And if so, should I bring practice questions with me, wear my suit, etc....?

They wouldn't have offered their time if they couldn't spare it.

Take them up on their offer. Make sure that they can give you honest feedback (sometimes it can be tough to be critical of people you like), and also read in between the lines as well in case they try to sugarcoat things.

They'll ask you whatever questions they want. If you have any questions in particular, e.g whether a response to a specific question would be appropriate, you can bring those too. Before the interview, give them your personal statement and AMCAS application (if they want it). Wear a suit to the interview unless they specify that it's going to be casual (and even then, wear business casual).

People who already know you are not always the best mock interviewers. Perhaps they could arrange for someone they know (who doesn't know you) for the interview.
You should show up dressed for the interview.

Is there any conflict of interest with one of the physicians being on the board of directors for one of the schools I have an interview at?

I don't see you as being a nervous interviewee. If they are just going to be nice and conversational, for you it might be a waste of time. Can you specify that you want a "stress interview" (which would be a worst-case scenario of trying to put you on the spot, that unfortunately, some interviewers continue to use).
