I got an interview offer letter from Indiana. However, the school requires me to take anatomy lab before matriculation. The problem is that I have a full-time job and can only take the class at night (after 6pm) and pbb during spring quarter. I thought I researched all the schools that I applied regarding their prereq and LoR requirements, but I guess I missed this one. 🙁 What would you do if you were in my shoes!?

It's quite simple really... If I really wanted to go to this school I would quit my job and take the course! Yeah, I know its a sacrifice but sometimes thats what it comes down to. I had to do make sacrifices and I am sure many others on here had to also. Either sacrifice your job or withdraw your application and let them know you won't be able to fulfill the requirments. You are already ahead of the game with an interview so I think if you have no other interviews as yet, it would be quite foolish to give up this one. Just my 2cents.

there is no need to quit your job. you said it yourself, you need to take it before matriculation. you have until the summer 09 to fulfill this. YOU said that you could take it after 6pm at nights during spring 09. the only problem would be finding a school that offers a night session in your area. make sure that indiana accepts its pre-reqs from a community college, since CC's are more inclined to offer night classes than other 4 year universities.

if its winter and you still have gotten any other interviews and no courses in your area at night.....ok then maybe its time to quit your job.

Haha... I agree.

Look at it this way. Say you take the interview, get accepted, but as the worst case scenario it's your only acceptance. Of course you will try everything in your power to knock off that pre-req, including quitting your job (and/or getting a new one that fits around that class). If you don't take the interview, and the worst case scenario happens (no other acceptances), you'll be doing exactly what DrReo stated: working that same job next year!
