if I got an interview invite today would it be bad if I scheduled it for the end of October? I'm really busy this fall but I don't want to give the school the impression that I don't care, because it is one of my top choices!

It's okay! I have 4 interviews and my latest one (from LECOM) had spots in September but had to schedule for November because of classes and work x___x
As long as it's before Dec 1, you're good. I actually think it's better to have an interview closer to Dec 1 because you'll be fresh in their head when they send out acceptances.
