So, I just had to schedule my first interview that will interfere with classes. It is the first Friday that I have class (so will be gone both Thursday and Friday when school starts that Wednesday). Should I email the Profs now? One of the classes is a lab class and has 3 dead days built in that we can skip, the other 2 classes are taught by the same prof (my adviser as well) so he should be cool with it - but do I email them now or wait until class is closer?

Give them two weeks' notice. Assuming you're starting classes towards the end of September, email them around the 12th.

I had a similar situation come up with missing the first day of class to attend a medical school interview. I would recommend contacting the professor now and letting them know that you scheduled your interview for that class day. I would then recommend that you follow up and send them a reminder a few days before the interview just in case they forgot about your previous email.
