From what I've read it seems like schools start giving out interviews at the end of August.. But when do the interviews actually start?

Think some schools sent out invites in July and they began around August. Each school is different.

Earliest interview I know of from last cycle was UF in the last week of July. They give about a 2-3 week notice so I guess the invitation was sent out early-mid July.

Go through the interview/acceptance/rejection thread for last cycle. I went through and looked for my schools to see when the earliest interview was. Or you can just look in the individual school threads.
