Do schools generally give you interview dates to choose from? And roughly how much time is there between an interview invitation and the actual interview itself? If a school gives you an interview date, can you reschedule?

That varies between schools. Some give over a month notice. Some give a couple weeks. Some let you pick dates. Some give you a date and if you can’t make it, they won’t allow you to reschedule.
 
I had a school give me a 3 day notice before my interview. Luckily it was in state but just be prepared to drop everything when need be.
 
the later on in the cycle, I found they gave you less time between offering and the actual date of interviews.

As of now, they are typically giving like a 1.5 months advance and giving you several options for dates.

UDM said no rescheduling except under extenuating circumstances. It has to be something like you are hospitalized, not your professor assigned too much work all of a sudden. You do have a list of a few dates to choose from (but it doesn't include nearly every date for the entire interview season).
