Is getting all your ECs done a year before applying a red flag?

It's not a red flag in the sense that it's something overtly negative that could bring down your entire application, but it's less desirable than having volunteer experiences spread out over years to show real commitment. How much were you able to do in one year?
 
Plan to continue those commitments during your senior year and maybe make that explicit. It’s not optimal but provided every box is checked and your stats are good it shouldn’t keep you out of med school.
 
Basically started all my EC at the end of sophomore year and am applying at the end of my junior year. Dk if I shot myself in the leg or not
Probably you have, unless you are exmilitary, ex-Peace Corps, have sky-high stats, or belong to a rare demographic. Wait a year to apply and keep up your ECs in the meanwhile.

I'm sure you won't listen to this advice, so be sure to continue strengthening your application during the next year so you'll look like a more appealing candidate on the (probable) second go round.
