According to the AACOMAS CIB document, out of the student population at PCOM, 5% comprise of Asians. That seems a little low. Should I remove it from my school list if I identify as an Asian?
Is this really a thing? I highly doubt racial prejudice is observed in professional schools... I would say you're reading into the numbers WAY TOO MUCH!
PCOM selects pretty heavily for people from PA and less than 2% of the state is Asian. When you consider this, asians may actually be slightly over represented.
No one will care about your ethnicity. Do keep in mind that applicants are not compelled to list ethnicity. Whether MD or DO, about 1/3rd the class is Asian. More like 40% at my school, but much lower at some schools in the south, like U AB.
Even the HBCs have 10% of thier classes as Asians!

These fellas above me said it best, when looking at statistics you MUST look at the sample size. What if the 5% of asians accepted were 100% of the asian application pool?
