If you intend on sending recommendation letters directly to amcas or interfolio, are there specific recommendation letterheads or forms that the professors ( or the pre-med committee ) have to write on?

Regardless where it's being sent to, they need to write the letter on official departmental letterhead.

I don't think so. Like shemarty said, it should be on a letterhead.
