I e-submitted my app about 10 days ago but it has not been mailed out yet. Can I change one of my evaluators who has not even started her electronic LOR?

Yes, its possible. Just go to ur app, in the evaluator's section. Delete their name, and add someone else.

FYI. If you delete an evaluator, they will receive an email saying you withdrew your application. I thought I had typed my professors email wrong and so I deleted it and she wrote me wanting to know why I wasn't applying to dental school anymore. Which wasn't the case. So if you plan on picking someone new you might want to give your old evaluator a heads up.
