I currently attend a University in the Quarter system.

So far, my first two years have been pretty great, maintained a high GPA and decent ECs and planning ahead for next year.

My class schedule for Fall Quarter looks like this (15 credit hours).

Physics I and Lab
Anatomy and Physiology I and Lab
Advanced Cell Biology
Animal Physiology (Need for upper levels)

ECs will include: Hospital Volunteering (4hrs/week), Assistant TA for Cell Biology Lab, and approximately 10 hours of undergraduate research.

I still have 3 spare credits, should I take biochem this year? or will that be overkill? Also, would you recommend any course that I should take that can supplement my MCAT prep?

You're doing all science right now. I STRONGLY recommend you use those 3 more credits for something strictly non-science, like philosophy or english, or whatever suits your fancy. But taking 5 science classes on top of TAing a science class and doing research would be enough to drive me crazy for sure. Plus, I'm sure med schools would appreciate some versatility. (English might help with VR and passages, and get you writing, which could help with the MCAT too.)

Biochem would be beyond an overkill...definitely take a non-science course. I also don't see anything wrong with just keeping those 15 credits tbh.
