I don't think that you necessarily need to take a bunch of classes to boost your GPA. The above average MCAT will compensate for the lower GPA somewhat. At this point, I would say apply and see what happens.
In reference to the letters, my advisor told me once; good letters boost your chances marginally, average letters are a check in the box, and poor letters are a dagger through the heart of your application.
One other thing, KU really likes clinical experiences. The more clinical exposure you have, the higher your chance of admission. I see that you were a pharmacy tech, but you should really try to get a part-time gig as a blood sucker, EKG tech, clinical research assistant, or a ton of shadowing and volunteer stuff. You can draw your own correlations, but a very large portion of my class had these types of experiences.
