Latest Date To Take Additional Summer Classes

I graduate in May and I plan on applying this summer. I don't need a formal post bacc or anything just really a few (3-4) additional courses just to make my GPA higher (like slightly above 3.4). Avg 3.7 the last 2 years of college but the first 2 years were 3.0 hence the need to make my gpa higher every chance I get (515 mcat as well). Just wondering if I take classes in May/June/July after I graduate can I still apply before the courses end and have those grades count? Basically when would be the last possible date a class could theoretically finish for the grade to be included in the cycle?

You would need to wait until the courses end AND you have your transcript submitted so that those grades can go on your AMCAS BEFORE you submit. Not sure how you think the grades can count if you haven't gotten a grade by the time you submit. If you take classes in July, assuming your grades won't be finalized and transcript released until Aug at the earliest, you're looking at a Aug/Sept submission date and an even later verification date. Waiting that long will severely hurt your chances more than a 0.02 bump in your GPA would improve it.

I know you have to submit a transcript when you apply but, for example if you're currently a senior and applied in the summer, how do they get your fall semester grades from senior year?? Or do those not really matter for admission per se? I guess if I take classes I have to do it in the may term at my school so the final grades are done before June

They get your fall and spring grades from senior year when you submit a final transcript prior to matriculation (aka they don't care until you're accepted).

Some people send an update in January with their fall transcript if it shows significant improvement and they think it will help their chances, or if a school asks for a fall transcript. It will simply be added to your file, it won't be incorporated into AMCAS and will not be incorporated into your AMCAS GPA unless someone recalculates it on their own.

You can certainly send an update after you get your grades. It just won't be included in your AMCAS GPA.
