One of the MDs who is writing me a letter is taking a long time to submit the letter. I've designated it to several schools, and my app is consequently incomplete because I don't have this letter. Can I remove the letter from AMCAS and add it later when the doc uploads it to Interfolio?

Call/email the MD and ask him how the letter is going and if he's making progress on him. This early in the season, waiting a little while probably won't affect your application.

Have you tried sending a gentle follow up Email to the professor? Something along the lines of "thank you so much for agreeing to write me a letter. I am hoping to be complete at many schools in the next few weeks, but will need your letter to complete the process. Could you let me know when youll be able to send it? Again, here _________ if how you can send it to AMCAS. Thank you for your quick attention to this matter."

I've been in touch with the doc, who has actually shown me the letter. The doc is just a little forgetful, and I happen to have another letter from an MD. I jumped the gun when I was filling out AMCAS initially, and designated this letter to several schools. Does AMCAS care if I mark it as no longer being sent, then change that or add the letter entry again when the doc actually sends the letter to interfolio?

You can add the letter to AMCAS later, I'm just not sure that schools will accept it if it comes after the initial submission. They may consider that an "update", which most are pretty strict about not allowing until after your interview.

In that case, just write and say you're very appreciative he/she was able to write the letter already and remind the doc to send it ASAP... like dirty360 said, it's still really early, with the vast majority of people not even verified yet. I would guess if you send a nice but to the point Email, he/she will probably send it out quickly and you won't lose much time.
 
#1 to get letter writers to hurry up: send them a thank you note with a small denomination giftcard inside, works every time.
