I've seen posts and general articles about needing 2 letters of rec from undergraduate science professors, 1 from a humanities professor and then maybe more from extracurriculars. How necessary is it to have 3 from undergraduate professors? I feel like I only have 1 professor who knows me pretty well and I'm graduating soon. I have 2-3 letters from extracurriculars/internships/research though.

It'd likely hurt you if you only had 1 from a professor who can speak to your academic abilities. Academics is a huge part of admissions and you want people who can speak to your academic ability. My advisers recommend one from a science professor, one from someone who can speak about my science abilities (research mentor, etc.), and another from someone who can speak to academic ability in general. So I'd say it's pretty important.
 
A lot of schools specifically require two letters from science professors, and another from someone else. It's very important.
 
If schools state that you need X number of letters from X people, you better follow those directions or face a swift rejection.

Does your undergrad have a pre-med committee? A committee letter usually overrides any individual letter requirements, but committees have their own letter requirements (mine required 3 science faculty, one of which could be a research PI, and 2 from extracurriculars)
