Looking for advice

My undergad committee completed their letter of recommendation and my committee packet is now ready to be mailed, however, one of my professors has yet to deliver their letter. I don't know if this is the norm for others, but the way it works at my school is the committee writes their letter/"cover letter" in addition to including whatever other letters you want to include from professors, etc.

I have three letters already delivered to my committee (one dentist, two science professors), but I am still waiting on this last one. I am very close to this professor and I have worked alongside her for over a year on various research projects. She played a large part in getting me into the lab I now work at for my gap year. She gets bogged down with letter requests from year to year (teaches popular courses), so she completes all of them at once and then delivers them. She said she would have had mine in two Fridays ago but my committee says they have yet to receive it. I sent her an email yesterday to follow up, again.

At this point I am kind of over it. My GPA was verified on the 12th and my scores are uploaded. I have completed all secondaries sent to me and paid/waived all fees. I am just waiting on this last letter. I feel like since I have waited this long I might as well see this through, and the additional recommendation would only help my chances... However, I don't want to end up waiting any longer than I have to. I double checked with all my schools and they accept a committee letter in lieu of individual letters, but I don't know if that means I have to still satisfy the individual requirements within my committee packet (like Columbia requires three science letters)...

So should I continue to wait?
 
I personally wouldn't wait longer than the first week of August.

I'll probably wait until next week.
