Edit: Okay, I've checked your post history and see that you're a junior. Interesting. Anyhow.
To start, it's not
you who puts anything into your LORs. It's your recommenders. Pick a chem professor, a biology professor, a professor from within your major, and a dentist who you know well and can attest to your abilities and personality. They should just talk about you and paint you in the best light possible--obviously, the need to comment on how they know you'll be a good fit for dental school. I'd say that the typical letter is about a page.
You can go ahead and get your letters now if you feel comfortable. You'll need to make an Interfolio account and send them there. Otherwise, you'll need to wait until your AADSAS application opens next year in June and send them there. The instructions are very clear once you make an account. OR, if you have a committee service at your school, you need to use that. Look into it and make sure. You'll need to get all of your individual letters together early so that your committee can put them together on time for an early application.
You need one personal statement. Talk about who you are, what makes you awesome, why you want to be a dentist, your personal goals, your successes, etc. The character limit is 4500 characters.
You want to have everything together so that you can apply with the first batch (ideally). Get it all done before June. It's awesome to have your DAT done before then, too, so you aren't having to worrying about studying for it on top of anything else. That means you could start studying for it NOW. I took mine the summer between my sophomore-junior year and am SO glad I did.
Are you graduating next year, or are you just about to start your junior year? If you're about to be a senior, realize that you will have a "gap" year after you graduate. Most people apply at the end of their junior year, but that doesn't mean it's strange to apply later!

Take the time to search around--you can find a WEALTH of knowledge that way, and you'll get more opinions than just those posted in response to your thread!
