LOR: Can an employer count as a non-science faculty LOR

I received a glowing letter of recommendation for something else I applied to from the supervisor at my UG on-campus tutoring center where I worked for 2 years as a science tutor. I am a biochemistry major and after looking over my relatively few non-science courses I realized that most of the professors either have no idea who I am or are unavailable for contact. I just noticed that most schools require a LOR from non-science FACULTY and don't specify that the faculty has to be a teacher in a class that you took.

Would it be normal/acceptable to use my old supervisor since she is non-science faculty (with a phD) even though she is technically my employer and she was never my professor for a class?
