So I currently have three letter of recs. 1 from a english prof, 1 from a biochemistry course , and another one from physiology research prof.

Some medical schools require 2 science letters and 1 non science letter.
Does my research letter count as a science letter?

Just in case, I asked a letter from a science prof whose class I did well in. But I have never actually met him. He said he would write one, and he isn't even requiring that I meet him or anything. He just wants the letter writing form and a personal statement. Nothing else.

Should I trust this letter at all?
 
All letters have to be from profs u had class with but ur research letter is a good supplementary one. As for the other letter it seems u don't have a choice so u should probably go with it.
 
Letter requirements vary on a school by school basis. Shoot admissions at your schools an e-mail or peruse the website and I'm sure you can clarify their policies. To be safe, I'd take the science prof's letter. It probably won't be great, but it'll meet a requirement, and you can use your great letters as supplementals. They'll get read.
