So here is my situation...

I have above average stats (PGPA: 3.92, GPA: 3.93, 144V 145Q 4.5W). Observation in 3 different settings: outpatient ortho, SNF and inpatient.

I currently have 2 PT's that I know very well and will write me good letters of recommendation. However, I cannot get one of my science professors to write me one!! All of them are too busy.

Would a LOR from a non-science professor be looked at poorly when compared to one from a science professor?

Unless the school specifies that the LOR needs to come from a science professor or professor from your major, I don't think it's a big issue. You could always call up admissions. It's best to get the best LOR that you can from a professor that knows you well enough, wants to help you succeed, and is good with deadlines and responding to emails quickly.

That's exactly what I was going to say. My academic LOR was from my pubic speaking professor. It was a small class so we were able to get to know each other quite well. Other than my physics professor I don't think any of my science class professors could even pick me out of a lineup and definitely wouldn't be able to provide anything other that a generic LOR.

Depends if the program requires a LOR from a certain genre of professor or not. As long as you meet the requirements of each program you are applying to, you will be fine.

I received a great LOR from my public speaking professor also! I am also lucky that one of my biology professors will also be writing a LOR for me due to my performance in his class (large portion of the class failed and I'm pretty sure I was the top performer grade-wise). There are some schools that do require two LORs and also LOR from science professor and/or LOR from professor of your major. It can be difficult, especially for post-baccu students (like myself) who aren't taking more advanced coursework and/or doing research where class sizes are smaller and you get more individualized attention. Just check to make sure all the requirements for the schools you want to apply to.
