Do medical schools just want LOR from science and non science professors one had for classes or they want LOR from doctors that one shadowed as well?
Only 3-4 MD schools request a physician or clinician LOR. Some college premed committees might request one, as well (and you should know if yours is one of them by now). For the most part, you won't need a physician LOR, unless you are applying to DO med schools, in which case a good number require or recommend the letter be from a DO.

Should I get a letter from a physician I shadowed in my AMCAS App or not?

Only if your committee requests it, or you are applying to one of the rare schools that wants one. Otherwise, it is useless. Shadowed doctors always write positive letters and have nothing useful to say about the characteristics adcomms are looking for.
