So I am going to get a LOR from my philosophy professor via interfolio. I'm just wondering: How do I get the AMCAS letterhead for him to write the letter on? I can't seem to find a "letterhead document" anywhere. I even checked the AMCAS website.

huh? the letterhead should be from his department.
(To make the letter all nice and official)

He should have his department's letterhead himself. Just ask him/her to "write the letter on official letterhead" and he/she will know what to do.

In addition, once the letter has been received, make sure to give Interfolio a call and confirm that all your letters are on letterhead/signed accordingly. This will save you a headache in case one of your professors forgets and you're trying to get your letters sent out.

IRC there was a post a few months ago of a person that did this.
He then messaged his professor letting him know that inter folio told him he didn't submit on letterhead, and then the professor flipped out and accused him of reading the letter and breaking that waiver we all signed.

What I've said to everyone:

"I'm sure you would have done this anyway, but just so you know the letters are required to be on official letterhead and signed in wet ink."

Every single person has known what I was on about. No confusion.

A professor worthy of the name should know to use official university letterhead for a LOR. Tread lightly that you don't insult the professor's intelligence.

lol, wise words my friend. I already feel like i'm bothering the professor. I actually didn't know I needed a non-science LOR until 2 months out from my MCAT (and 3 from my app), so I emailed one of my old philosophy professors from like 2 years ago. I was very active and participated in his class and took that extra step with every homework assignment and extra credit opportunities, so he remembered me and was more than willing to.

I didn't know about the wet ink and letterhead thing to be absolute. thanks for the reminder!
