Maybe it's an old-school question, but when professors write your LOR, say on a Word Document, and then upload it electronically on AADSAS, does it include some special letterhead?

Automatically NO. the professor has to have the letterhead in his word document to have it. it looks better if there is a letterhead

yeah recommendation letter its better to have a letterhead to make it look more official, but its not needed
