It's been over one month and the MD and DO that i shadowed still haven't sent my LOR's to interfolio. How should i handle this without being annoying?

You should send them an email that ask if they need any other info from you or if there is anything you can do to help them with it. That way you aren't directly being pushy. You can also give an exact date when you need the LOR by. That's what I did when my physician was taking forever with my LOR.
