I'm a third year interested in OB/Gyn and I've had a couple attendings offer to write a LOR for me. As of now, I have my CV complete and updated but I'm just starting to work on my Personal Statement.

Should I go ahead and send my CV without the PS to these attendings (2 are out of town) so their memory of my performance is more "fresh"? Or wait until I'm completely finished with my PS and do it then?

I think you should just send your CV - I had 3 out of 4 of my letters before my PS was done and it was fine. They will probably be able to write you better letters now having recently worked with you. I wouldn't worry about it.
