As far as the committee letter goes, you can submit without entering it in and add it later. That way your app can still get out to schools that don't need the committee letter, but you can add it later if a school you apply to requires it.

Do letters from PI count as a science professor LOR? I thought it has to be a science prof that has taught you.
He was also my professor!
