LORs for SF Match

We have to mail out our application packet to SF Match, and it seems that people recommend that we mail all our recommendation letters along with our packet to avoid any delays with processing our application. But if we mail out the application packet ourselves, that means that we need to ask our letter writers to give us their recommendation letters directly. Is it standard practice for the letter writers give their letters directly to the student?? It seems like it would be really easy for the student to just open up the envelope to read the letter and then seal it back up in a new envelope. I'm not planning on doing this but I would think that this thought may come across the writers' minds. What is everyone else doing when asking for letters for SF Match?
 
You could also have your dean's office or registrar package letters that had been sent to their office on your behalf. There's an FAQ on the SF match website that addresses this issue for those who, like myself, just had letter writers send letters directly to the registrar (see link below).

By the way, not quite sure how one would be tempted to open a LOR when there's a signature across the back of the envelope (because there usually is one).
