Any other extracurriculars? Other clinical volunteering activities? Find manual dexterity skills? Outreach to schools in Texas or on your list?
I haven't reached out to any schools yet because I hadn't even taken the DAT until two days ago.
All extracurriculars are listed now; I edited and updated them.
As for dexterity, painting, drawing, baking carpentry, and fishing

Regarding your scores, they're not bad at all! In addition, a post bac with a 3.7 GPA will definitely help. To assist you with your application process, it would be advisable to directly reach out to your preferred schools. If feasible, consider visiting them in person at an opportune time to discuss your aspirations with someone directly. I understand that this can be a bold move, and many students may not favor this suggestion. However, over the years, I have seen students achieve success using this approach.

Once you gather more information from the schools, you will have a better understanding of how to proceed. There is a possibility they may request a DAT retake, but personally, I believe your scores are sufficient. Nonetheless, it's difficult to predict what they may require from you.

These are just my thoughts after working with students for over 20 years. I genuinely wish you the very best .

Just my 2 cents others might have different opinions
