I was wondering if anybody had any advice for someone who technically can't participate in grade replacement because my original undergrad uses more credits than any school in my area. It seems that with all the averaging, the highest GPA I could get would be a 3.0. Would adcoms be able to see my upward trend? My post-bacc gpa is 3.7 right now but my former undergrad/starting gpa was 2.4.

I have retaken the subjects that I did poorly in but the credit hours do not match.

I would be very sure you have at least a 3.0 before applying....otherwise you may get screened out.

I would consider looking into any possible online retakes that would match credit hours...but ultimately if you do well on mcat that should be a big boost...along with your post bacc.

Your post-bac grades are significantly better than your undergrad grades - the adcoms will definitely acknowledge the difference. I'm not sure if you would get screened out with a <3.0 undergrad gpa, you should call the schools you're interested in to check.
