Low GPA/solid MCAT advice?

Hi everyone! I'm new to SDN and looking for advice.

My background info:

White female, PA resident, top 10 undergrad
3.37 sGPA, 3.64 cGPA, 516 MCAT (129/128/127/132)
I'm hoping my MCAT will make up for my low GPA...

ECs:
300+ hours of clinical research/volunteering – I volunteered in a clinical research lab my senior year and now work there full-time for my gap year. I also did an independent research project & poster presentation
30 hours of research/work for pre-school education program, 100 hours as a research assistant in a biology lab
220 hours clinical volunteering, 40 hours non-clinical volunteering
Leadership position in my sorority
American Sign Language Club, Club Figure Skating, outreach club for mental health awareness, certified in Mental Health First Aid
Diving coach for 2 years (summer job)
strong LORs from my PI and a professor

I had some personal issues going on my first year of college that really screwed up my GPA. Senior year GPAs were 4.00 (fall) and 3.88 (spring)

Where do I have the best shot? Is it worth waiting another year to get NC residency? UNC heavily favors in-state and it's one of my top choices.
