I'm in a tough spot I've checked across 3 states and have not found a biochemistry class for the summer. I plan on taking the MCAT at the end of the summer, but I want knowledge in biochemistry. My school refuses to accept transfer credits if the school does not include a lab which most don't over the summer so should I take it without credit at a 4 year school / community college and then take it here again the fall? Or take it online?

It sounds like a waste of money to do that. You could just teach yourself biochem over the summer through Khan Academy or something similar online.

Bad idea IMO. The MCAT is riddled with biochem. Trying to teach yourself biochem while studying and preparing sounds like a recipe for disaster.

This really depends on the person. Some can self teach biochem and do well on the MCAT. Others can't.

True. I think it's likely though that someone who can teach themselves biochem but chooses to take a course will do better than without the course. Maybe the amount of knowledge gained is the same between the two scenarios, but the prep time is better utilized in the former.
