How certain are you that the MCAT score was the only weakness in your app, and how likely do you think you are to raise the score significantly? I ask the first question because if you also need to shore up your ECs, you probably haven't had enough time since the last app cycle to significantly improve those, and you should consider waiting one more year. If you have stellar ECs, strong LORs, excellent essays, and you've been told you interview well after multiple mock interviews, then retaking the MCAT is probably reasonable if you have been scoring much higher than 500 on your practice tests, and if you will have the time to study for the retake properly.

Interview season at most schools starts in August or September, so I would say that a mid July app would be fine as long as everything else was complete and ready to go as soon as your score resulted. In addition, you should strongly consider pre-writing your secondaries (all prompts available here on SDN) so that you can turn them all around within a week or two at most. That will also help you "catch up" from submitting your AMCAS in July.
