My girlfriend is currently studying hard and long hours for the MCAT. Does any one have suggestions on what to include in a "care package" that will help motivate her and show my support?

Literally anything. Anything will show that you recognize she is putting in a lot of time and effort. A lot of people don't even understand what a struggle preparing for the MCAT is. My sister made me cookies and I almost cried!

This is adorable. Also, food probably. I'm a huge sucker for chips, so that would be my vote.

I agree with food! Also, if you won't be a distraction, maybe join her at the library? I really liked when my boyfriend was physically there with me, even if he was just watching Netflix on his laptop. He was great for a quick pep talk or hand squeeze when I got stressed.

AAMC FL's, coffee, candy, foot rubs, something to make her laugh

All of the food.

But also my boyfriend bought me nice pens/highlighters and I love them so much. I don't know if that's a thing other people enjoy though or if I am just weird. (The Zebra Mildliners are lovely if you think she might like fun study supplies.)

For the two weeks leading up to MCAT, my SO got me a giant Manila envelope (it was Yuge) of

Post-it notes
High lighters
Index cards
Granola bars
Two 1L bottles of smart water
Chocolate
Cold Starbucks espresso bottles
Altoid peopermints (awesome for concentration because the cool sensation keeps you awake)
A handwritten card/note

Other ideas are:

-Offer to make her lunches or dinners
-Make and send motivational memes or gifs
-Send texts every once in a while that remind her she's doing great.

Offering to make her meals if possible is a great one! I know my menu consisted of mostly cereal because I just did not have time to cook. If you can't be around her due to distance or something, snacks, her favorite energy type drink (coffee, tea, monster), her favorite candy. Literally anything will make her happy just to know you care.
